I have been working in portlaoise for the last 8 years and for the last 2 years I have been working here in the Killeshin Hotel. My favourite chef’s dish is the crab cakes yum.

Favourite dish: ‘Fish and chips’. I only allow myself to have this as a treat but it is the traditional fare at is very best.
